The American Cheese Society (ACS) was founded in 1983 by Professor Frank Kosikowski of Cornell University.  This segment explores the evolution of the ACS from its origins in academia through the formative early years of the organization, including first conferences, judging and competition, festival of cheese and cheese sale. ACS @ 25 presents the history of the American Cheese Society from its founding in 1983 through the evolution of the cheese industry and the renaissance and growth through the quarter-century mark, 2008.

It is the first Cheese Chick Productions documentary and my most ambitious undertaking to date.
